All I'm saying is I've done the experiment in my kitchen and I got almost exactly 8 cups of New Orleans style red beans and sausage. I guess 3/4 pound of sliced cooked sausage could account for the 2 extra cups.
Maybe your source is talking about just the beans without any seasoning or liquid, as if you were cooking them to add to chili or something.
ETA: From the National Bean Institute:
