I'm not sure why this is even a penalty. What's the big advantage for a team to have more players further away from the line of scrimmage?

Has to do with who is an eligible receiver and all that.

On a running play? Nothing. On a passing play, it determines who is eligible. So if the WR is on the line, the TE is covered up and cannot go out for a pass.

So defenses can see who is eligible receivers or not
