Bumping this thread. Wife and I are taking the kids out there this week. Definitely hitting the Thai place. Any other can't miss kind of places out there?

Hugo's Cellar.
Oscar's.
Both downtown. Both classic. Old Vegas. Great food, outstanding service. Get the Kona coffee at Hugo's. Unique brewing process at your table. At Oscar's ask for Nick to wait on you. He has some history in that town. So does Oscar for that matter.
The Golden Steer, but only if you've never been. I thought it was a bit less quality last time I went.
If you like authentic Italian, and that's nearly impossible to find anywhere except my house, see if you can't get yourself invited to the Italian American club.
Carnevino. Steaks ages for up to 240 days if you call ahead.
But, if you've never been, and had to pick one place, pick Hugo's Cellar. It is one of those "have to" places.
