Don't pull your piece unless you are planning to pull the trigger.
Don't draw your weapon unless you are WILLING to pull the trigger.
But understand that you can't legally use deadly force (in Louisiana) once the threat has ended. So if the dude drops his knife when you draw your weapon, you can't legally shoot him/her.
