I salt/pepper/paprika my flour. Soak in buttermilk, but just long enough for the oil to heat up. Electric skillet at 325 for chicken, around 350-375 for Pork Chops or veggies. Let it drip from the buttermilk, when it quits dripping, toss it in the flour. Move it around some to get it on the sides. Flip it over and repeat, then fry it. About 10 minutes give or take.
We fried pork chops last week, and some squash and tomatoes. I told my wife the red tomatoes wouldn't fry as well as green ones, but she wanted to try anyways. They tasted fine, but just fell apart. The squash was amazing. I need some fresh okra now. I used corn meal instead of flour since I was doing veggies.
