I've had mine for a year. I too had trouble maintaining low temps until I put an old grate where the diffuser is supposed to go, then placed a metal bowl full of hot water on it. This keeps the food moist and the temperature low.
I just bought a Maverick 732 and the temp was actually 15-20 degrees higher than what the Akorn temperature gauge was showing.
