re: Hashbrown omelette recipe

I've always loved the potato and onion omelet at Camellia Grill. I watched them chop up the french fries and onions and cook them on the griddle before they poured the eggs over the mixture. Made them at home a number of times. Worked out pretty well. Not quite as good as on their well seasoned griddle.
