Bad bleat jackpots are a good way to turn a legal game into an illegal game fast. Cash game rules state you can leave at any time but you can't "go south" or take money off the table.
Blinds should not go up unless the game is too small. That is what makes cash games differ from tournament poker. Also blinds are not paid by cash players who stand up or miss hands. Unless they miss a blind, then they must pay it before receiving a new hand.

No way would I do a community deal. We have 3-4 guys who can deal and 10-12 drunks who I don't want taking 30 minutes to play 1 hand.
If you've got lots of capable dealers just put 2 on opposite sides and swap every hour.
If you want it to be a friendly game and allow for new people I'd definitely have people come in at a lower option than $100 to start. If people are starting out buying in $400 what happens when your buddy loses QQ to AA for $400 in the first 20 minutes, and is in for $800 by 8:30.
I'm always prepared with at least 5 max buy-ins so for your game I'd need to bring $2k.
