Not the best, but my favorite was probably the one down I-10 in 21 Jump Street with all of the expected cliche explosions that they're left hanging for.

A lot of good ones mentioned already.
The thing that cracks me up about the Bullitt chase scene (even though I love it) is that because of they way they edited it, thecars sound like they have 8 speed transmissions. They just keep shifting and shifting and shifting. For a "car guy" it's kinds distracting. But it's still GOAT.
For non vehicle submissions, I'd throw out the movie "Run" with Patrick Dempsey. He was doing parkour before there was such a thing.
Another good one even is the chase scene from Hooper.

For those that said they haven't seen Bullitt, TCM is showing it Tuesday at 5:00 pm Central.
The 1968 (McQueen) The Thomas Crown Affair is showing before it at 3:15.
The 1959 Ben-Hur starts at 7:00 Tuesday. Great chase/race scene in it's own right!
If you want to see Maggie simmer, set the VCR for tonight (Monday) at 2:00 am. They are showing Cat on a Hot Tin Roof.

They are in the middle of their 31 Days of Oscar so there's good stuff on every day. Tonight's schedule is weak compared to most of it.

not sure if this counts as a "chase" - but in the movie "heat" when pacino is dropped off via helicopter into a unmarked car to meet up w/ deniro for a cup of coffee
