That's basically what I use but instead of glass I have a granite plate. I use the Lee valley jig as well.

With the 2000 it's a freaking mirror. I then lap it with a leather strop and whatever the stuff is you put on a strop.

I can testify that a chisel will easily cut to the bone with very little pressure using that system.
