I have some paper wheels. I think they can potentially work well and fast - and I've achieved pretty good results - sometimes. I have just free handed it, but I'm not steady enough to get a consistent angle. My grinder spins faster than desired. You really want to slow it down to minimize chance of overheating. Recently I've watched Murray Carter videos and tried my 1000/6000 water stone again with pretty good results in about 5 minutes per knife from a quite dull edge.
PS: I don't think my wheels run completely true and I'm not sure whether it is the wheels or the grinder. Don't get the cheapest wheels ( I got mine from grizzly). You probably should get the razor sharp wheels which I think are higher quality.
