experience around are GSP.

A GSP is the absolute opposite if mellow. Mine is great around kids, very intelligent.... But mellow isn't one of his attributes and take this into account as well. The vet cares for several of them and his son hunts them and he says mine is the most calm he has ever seen. They like to work and play constantly. Great temperament, but this isn't what you are looking for.
Not all goldens are calm either. Great dispositions, but again you are looking for a mellow dog and have bird dogs at the top of your list. I'd say this as well, when you start looking for dogs with recessive genes you can get other recessive genes with them which could be a bad thing.

Having 3 GSP's myself, I definitely can relate. However, if you exercise your GSP daily, you will find that they are one of the best house dogs around. With all of the exercise they get each day, most of their time in the house, they are usually just laying around sleeping, until about 5pm, they will start getting antsy and wild, and usually take them out to a park so they can run by 6.

What about a curly coated retriever (not to be confused with a labradoodle)? Those are pretty unique looking dogs, and still have the temperament of a retriever.

Is dead on with his description of GSPs. Mine has mellowed out now that he is 5 years old and clipped, but when it is go time for playing or hunting, he is back to being a beast. He is protective almost to a sin of 5 month old my daughter. Great family dog, but get ready to exercise. If you want mellow, get a basset hound. If you need a hunting (retrieving dog), there are several option, but do not look for a GSP if you are not READY. They are in no way a lab or lab substitute. I cannot tell you how many people want to give their dog away after learning this lesson the hard way.
