Leffe
Chimay
Rochefort
Maredsous
Wilderen

If I could get one beer at each one, what should it be?

UPDATE:

Just got back. Did Leffe brewery since it is in a pretty town. Did a couple of small non-exporting craft breweries, and a couple of the above mentioned trappists...

However, we did end up at Cantillon yesterday morning, and it was awesome. Drank a new lambic, a few aged lambics, a kriek, gueuze, and an Iris.

Honestly, I don't know of anything special you would be able to get at those breweries that can't be found on shelves.

Do you not normally drink Belgian beer and want advice on particular styles to favor? For instance, all of Chimay's stuff is pretty much equally regarded, it comes down to style preference.

Rochefort is in a beautiful, wooded setting and have great cheeses.
