This is how we've always done them and come out great. Only difference is we usually brown the sausage first and use that grease to brown the doves, but I'm sure the bacon adds some great flavor too because, well, what doesn't bacon help

I've usually always done it with sausage too, but the sausage I use is so heavily smoked, I don't get a lot of grease out of it. With ducks and other lean game, it needs all the help they can get with some extra fat!
