Because unless the Earth is actively losing mass due to this, it will all come out in the wash, cosmically speaking.
And I guess we survived all the tectonic plate shifts, ice ages and warming periods (there are fossils of ferns above the Arctic Circle, you now?) before mankind, so we'll likely survive this extremely brief moment in time when man was ever so slightly increasing CO2 concentrations.

Isostatic equilibrium is not reached instantaneously, and not all areas are in equilibrium at all times.
Ice melting at the south pole and dispersing around the oceans in a short period of time can certainly alter the local gravitational field, however minutely. A person walking around the room does the same, doesn't he?
