I agree that aroma is a big component that does impact taste.

For example, my last IPA i brewed, is loaded with citra hops. However, i dry hopped with 1 oz simcoe, and 2 oz. citra. Simcoe is a very strong smelling hop, and so a good portion of the nose is piney hops. It has a very citrusy taste, almost a juicy fruit-ish flavor, but is less accentuated because of the simcoe hops. Next time i brew, i'll omit the simcoe dry hop. It's still really good.

And i agree about GITM being much better this year. Such a good flavor and nose. It will be one i try to replicate next year.
