Besides the amount of flags, I find it hilarious practically every defensive penalty results in an automatic first down.

Doesn't a lot of it have to do with "player safety"?
That being the case, you can blame former players suing the NFL and current players bitching about injuries.
The concentration and more consistent enforcement on some of these penalties is to cover the NFL's arse when greedy retired players want to sue b/c they're broke.
