Here's why. If you take Ellington, you're taking him to sit on your bench, not start, and probably not because you're looking to keep him for the future. You need a TE. J.T. is a top tier TE in a high-scoring offense. J.T. is also young, so adds that potential for being a keeper.

Don't buy the Ellington hype when you have a young, talented, top tier player begging to be on your squad.

Both of his RBs are notoriously always injured, save Matthews last year. When one or both goes down, what's he going to do? The Cowboys are so confident that Murray will get injured at some point that they already have plays drawn specifically for Lance Dunbar...Take Ellington, then steal Rudolph or in a later round. Besides, you can never have too much RB depth; can you?? Especially one that figures to be heavily involved in not only the run game, but the passing game as well.

BONUS POINT: He already has D. Thomas. Do you really want DT88 + J. Thomas on your roster? I try and stay away from those situations, personally.
