Sweet Potato Pancakes

Wrap a sweet potato or 4 individually in foil withn a pat of butter and bake for 45 mins to an hour at 350. You should easily be able to stick a knife or fork in the potato.

Mash the baked sweet potato well, with a fork. You can also throw in a mashed banana.
Make pancake mix according to instructions on the box for 4 or 6 (I like whole wheat pancake mix) and add the sweet potato.

Cook pancakes according to instructions on the box.

Roasting sweet potatoes in cubes or slices is definitely my go-to method for cooking them, but they are also tasty shredded and made into pancake/latke/fritter type things. Soup is a good vehicle for sweet potatoes. Here's one I like:
