I just read the article. And I still stand by what I said. A 14 degree is sharper than a 20 degree. Obviously the wider the angle the more durable it is, but durability and sharpness are separate things. Also, if you run a 14 through a 20, you're creating a double bevel. You'll never get that 14 back.

Wait, so the fine/course options on my hand held sharpener are for degrees of bevel? I guess that makes sense, and now i feel less smart.

No, fine and course is the texture you are sharpening them on. Your sharpener likely has the same degrees for both options.
