I never knew a sheepshead was considered a trash fish until someone called me out on it one day. I moved from Tennessee to Orange Beach. I'd fish on the jetties at Cotton Bayou and pull in sheepshead and reds all day. I ate both. We caught a lot more sheepshead than reds, so sheepsheads were a good portion of our broke-arse diet. A few years later someone told me that sheepshead was a you-know-what fish. I just laughed it off. Sheepshead is good eatin. Not the most flavorable, but they fill your belly and taste better than catfish and tilapia.

Growing up in LA we always tossed these back. Since moving to FL I've learned the Floridians love them. They'd be shocked to see what we tossed back in LA..

The local Asians will keep Ladyfish, they boil the meat and then make a patty of sorts out of it with lemongrass and other spices before pan frying. Take my word for it, its just awful..
