I almost added some roasted jalapenos, but I was in hurry and didn't roast those. I thought about a little chipotle and sauce, but didn't do that either. It's an easy recipe to conform to your personal tastes. Since I'm not a chicken person, I might do pork instead of chicken the next time if I don't go the tamale route, but the tamales were a fine addition.
