I never understood the huge complaint. Was it fast tracked that she got her powers back? Yes, but they don't have 20+ episodes a season in this series to burn them on filler. Not to mention as you stated this was supposed to be a one season deal in the beginning.

One way I've looked at it is that Amon didn't know how to block airbending from benders being he had never gotten the chance to try it on anyone before (meaning that his technique varied from each element of bending). Not having the other elements left Korra with no other choice but to connect with airbending which allowed her to connect spiritually with previous avatars which brings about the cosmic/spiritual energy of the avatar thanks to Rava. This would give her the ability to overcome Amon's waterbending block.

I do like this series not having wasteful filler though, every episode progresses the story well. I just hope this move to the internet doesn't kill the series before the final season, it would be terrible for it not to finish.

I don't see what you'd have to change that much in the plot. All you have to do is give Korra her powers back when she reconnects with Rava in the Wan flashback. Maybe have people think the Avatar isn't worth as much anymore with just airbending, maybe Tenzin saying that since she doesn't have the other elements that it would be ok for her to eventually get airbending tattoos, and when Korra is feeling the worst about herself, Unalaq comes in and tells her everything she wants to hear. It would still take the same number of episodes to tell that story, and Korra being a bitch would be more understandable.
