Brown it in a cast iron pot.
Remove.
Cook down onions, bell peppers, garlic in the gremies.
Add meat back.
Add water.
Put on cook for a few hours.

Serve over rice with green beans and cornbread.

I'm going to be doing this at a beach condo and not sure if the right pot will be available.

What about the oven?

Take a pot or two to the beach. I always do. Those condos never have what you need.

Ehh. Oven can work too. Not a fan of it personally.

Cut me some slack Otis. I'm just the brat son who rarely has to cook for others on vacation, so I'm not even thinking on that level. I think I've only contributed etouffee a couple times. My wife usually covers for me.

Ham, I'm not sure what they will have there.

A magnalite can work for sure. It's just not really a pot for browning meat. More of a stew pot.

That being said, If you're in charge of cooking one or two meals I'd recommend bringing your own pot. It just gives that certainty that you're taken care of.

With a magnelite I'd have the same method of cooking, just put in oven for a few hours. I've always been hesitant with adding water to a magnelite though. Feels like it takes for ever to cook down.

I've used water in Magnalite and not had problems.

I need a trailer when I travel just to carry my cooking gear. We travel every Thanksgiving and normally with a few other families and none of us can do without.

But we can be a bit extreme. Just pack a good heavy pot and lid, tongs, good spoon, couple good sharp knives and a big cutting board. That will get you through. If I have sharp knives and a big cutting board I can make the rest work.

I don't find water to be a problem in a magnelite. Just saying that it seems to take longer to cook down than in cast iron. I love a good magnelite pot and think it's a necessity in the cooking world, but it'll never replace a cast iron. Hell, nothing will.

My people convinced me to go the oven route.

Turned out fantastic. Tons of flavor and very moist. Great seasoning.



Made a nice gravy.

We also threw in the microwave crawfish boudin from T-Boy's. Pretty damn good to go from frozen to 7 minutes in the microwave.
