I'm going to pull these at about 5 hours, no wrapping. At 3-1/2 hours I slathered them with some squeeze butter. At 4-1/2 I checked the internal temp, temp was 180, so I glazed them, and will be pulling soon. I've never checked internal temp on pork ribs, but I didn't know how to tell when these were done, so I used the thermo. Will be between 190 and 200 when I pull them. I hope they taste as good as they look.
Mid cook I decided to try a new side, smoked onions. Rubbed some oil and rib rub on some yellow onions and wrapped them in foil. After about an hour I'm going to unwrap them and put some sweet bbq sauce on them.
