I'll second the recommendation for Gus's Fried Chicken as being the best stop in Memphis..

I tried two Memphis BBQ joints last month.. Central and Neely's Interstate...

I actually preferred Interstate but neither was spectacular IMHO. The BBQ at Central was dry and overcooked. I tried their sampler and found the brisket and sausage were the only ones I'd consider good. Their sauces were top notch though. The ribs were a terrible disappointment. I'd recommend the sausage and cheese platter for an appetizer.

Interstate's BBQ flavor was good and the moisture was hard to judge as they drown the meats in sauce. If going again I'd ask for sauce on the side. The ribs were large and meaty and had just the right amount of smoke. The sides were far better than at Central.

To my surprise most locals really dislike Vergo's Rendezvous. We didnt get a chance to check them out as they were closed.

As for ribs...I really like the Memphis dry style at the Corky's Poplar location...this won't sit well with some. I love their ribs.

Rendezvous hate is nothing but people's need to chop down the tallest daisy. I've been there 3 times and had great meals all three times. Not to mention the location and building is just cool as frick. Not claiming they are the worlds greatest ribs, but they are very good and the experience is neat. Go to the Peabody at 4:30 to have a couple of drinks in the lobby and watch the ducks. Then walk over to the rendezvous for some ribs and then over to Beale St. Always makes for a good night.

When I lived in Memphis I went to Rendezvous many times. The key was whether you got ribs (I went there primarily for dry ribs) fresh from the pit, or after they had been sitting under a heat lamp. I learned from locals that there were best times to arrive at Rendezvous and to ask for favorite waiters. Getting on a waiter's good side was critical. He would tell you to get a sausage and cheese plate and a couple beers if there was no fresh ribs to kill the time until the ribs were ready. The waiter would place your order only when fresh ribs were ready.
