Yikes, that's a lot of butter and oil. Did it need all of that? I like to use as little as possible - I'm eating veggies for a reason.....
Edit: Maybe that's not too much. If you get 4 servings out of it, it's only a little over a tbsp oil per serving.

I had two pounds of beans and it didn't really need as much as called for, but for that amount, I didn't find it to be too much at all. It wasn't overdosed. You could skip the butter and just use olive oil if you want or just toss everything together in a skillet with no fat at all and rely on the other flavors. I think it's a recipe that you can tinker with to suit your desires.
