what type of potato salad are y'all generally doing for this? what is the base? surely not a mayo base, right?

I've always had it with a standard potato salad. Just make sure it's not whipped, needs to be a chunky texture. Something like: mayo, mustard, vinegar, boil egg, salt, pepper, celery, garlic powder, paprika.

I've always used a basic potato salad, same one I would use for any side dish. Potatoes(careful not to cream them, a little chunkiness helps), mayo, good bit of yellow mustard, eggs, & black pepper & salt. Someone mentioned they didn't like it because it made the gumbo cool down to quickly. I never use cold potato salad, fix it just before you are ready to eat & it will be warm/room temp.
Sweet potatoes are also a norm around where I grew up, not a big fan just because I'm not a big sweet potato fan but some people love it.
