Six Feet Under is the only answer to this question.
In these threads, I always see this show the most. I watched the 1st season way back when it started, but didn't finish. Can't remember exactly why anymore. Anyway, would I need to watch the whole series to really enjoy the series finale, or could I watch last season?

I thought the last ten minutes or so of the 6FU finale were amazing, and those are literally the only minutes of the show I've ever seen. Just such a cool way to end a show.
My favorites:
Lost. I know it gets hated on by a lot of people, but I fricking loved it. Great ending to one of my favorite shows of all time.
The Wire. That final montage is just so awesome...from seeing certain characters have happy endings to see others have sad ones. Just a great wrap up to the single best TV show I've ever seen.
Breaking Bad. One of the most solid finales of all time. Did a great job of wrapping up the plot points created in the last few episodes, as well as giving us a great end to WW's legacy (even though you knew how it would end for Walt, it was still fitting and perfect how it played out).
Fresh Prince. I thought this was a very well-done finale for a sitcom. Very funny and heartwarming at the same time. Was pretty awesome seeing that Will finally had that strong father figure he always wanted/needed. Uncle Phil telling him "I don't care what anybody says...you are my son." is just pure fricking awesomeness.
Friends. Great finale. I actually watched it the other day. From Ross/Rachel's "I got off the plane" to all of them having keys to the apartment. Seeing Friends here and there in syndication, that was a really good show (and a great one for a while).
Cheers. "Sorry; we're closed." Perfect ending to one of the most consistently funny shows ever.
Freaks and Geeks. Great ending to a fantastic show. Daniel and the geeks playing D&D, Lindsey leaving to follow TGD. Etc. Always wished this show would've continued on, but in a weird way, it's just such a perfect show as it stands.

I don't think you can appreciate the finale without watching the entire series and getting to know the characters and seeing their highs and lows.
The series can be a challenge at times because it's so depressing and the characters can be so UNlikeable....but that's the point. But the final season is the best...and more importantly, the final episode and final scene.
If you enjoy other HBO hits like The Wire, The Sopranos, Deadwood, etc. you should DEFINITELY watch Six Feet Under. It's a true masterpiece that doesn't receive enough love on the message boards.
