the taste didn't bother me but the texture was nothing at all like a noodle. too much crunch

The crunch is my problem with subbing it for pasta. Too al dente for me. I like it as a side, though, with butter, S&P and parm cheese with some green onions in the mix.

Cooking it longer will soften it. Half of a ripe medium size squash will take 45-60 minutes in the oven at 400 degrees to produce a soft bite.
