good and bad. i started with 10 wood duck legs, 2 woodcock legs, and 2 gray duck legs. the bad was that i overcooked the duck legs. i used a recipe for chicken that went like this:
-steam wings for 10 mins
-put in fridge for one hour to dry
-cook 20 mins on one side and 20 mins on the other at 425.
-mix w wing sauce that you prepared
-eat
when the duck legs came out they were dry as shite and tough. i love buffalo sauce though so they were okay i guess. i just cooked them waaay too long. the woodcock legs were like jerky almost since they were the smallest.
the good part though, was that i also thawed, steamed & cooked a squirrel the same way. it went into the oven right when the duck legs were done. since the duck legs were so dry i only cooked the squirrel 15 mins on one side and maybe 7-8 mins on the other. i do not particularly care for squirrel, but it was no shite awesome. only thing i'd do differently was that i should have quartered it first. so i think i just overdid the duck.
anyway the moral of the story is: don't overcook duck. i knew this but i dicked it up anyway. oh well.
