Whatever Happened to Pressed Duck?

It used to be a staple on Chinese restaurant menus but I haven't seen it in years.

I found a used duck press for 4k that was being sold from a restaurant in Argentina. I didn't buy it, because it was 4k.

It was sterling, engraved, and had the name of the hotel engraved on it too. There were some others for around 1k I saw that are more reasonable, but not as ornate.

I may pull the trigger on one of those one day.

Honestly you won't find a dish like that anywhere in the USA outside of the best french restaurants. Everyone will make stock from the bones or a rich sauce. I only dream of a whole duck pressed for the bone and blood juice here locally.

Antoine's has a duck press. They don't have the dish on their menu, though. I think they will make the dish for special dinners.

They are the only restaurant around here I know of that even has one. I saw one for sale at a store in Paris

One of my coworkers often talks about the French version of this dish and says it's great if you can find it
