We fry cottontails. Swamp rabbits are bigger, tougher, and stronger tasting ... They are cooked n gravy around here. Good luck.

cooked this meal several yrs ago, thought I'd share

smothered rabbit with a dark gravy , topped over rice
fresh string beans pan seared with garlic and Tasso
baby carrots boiled in vanilla sugar water, dusted with cinnamon
grilled pineapple with a honey cilantro glaze

i cooked the rabbit "slow and low" for 3 hrs as the meat fell off the bone

man i love me some rabbit
