Ill pot roast pintail teal wigeon mallards speckle bellies and some Greys. Have made sausage with trash ducks and have made jambalaya some also. Last week I took the four mistake spoonies from the weekend at the camp and pan fried them. They were very good. Marinated in buttermilk for two days, rinsed clean in water, pounded flat with a mallet, and cut into strips. Quick toss in egg wash and battered in spiced flour. Some of the best duck I've ever made and I think the key was the buttermilk marinade bath. Probably would work with any skinning quality ducks or snows.
