been doing it for years. i just tell the processor 60/40, and its a tad drier than venison or pork sausage but a great flavor that works well in gumbos etc. gonna get some jalapeno and cheese summer sausage, jalapeno and cheese slim jims, and tamales made from it as well. Buddy has a bag just as heavy and we gonna take it after our last haul this weekend.
