My credit score is around 780 but I only have one CC at the moment - Discover IT. I can choose the airline I want.. Mostly flights from Pitt to Nola and back. Cash back would be ideal but I wouldnt turn down redeeming for travel if there were better deals.

Well you could get several suggestions here, but I think your best option for a personal card to earn travel points would be the Chase Sapphire Preferred and combine it with the Chase Freedom. Those points will provide you with several airline/hotel options and generally give a better return than a cash back card.
You could look at other cards if you were open to the idea of applying for a biz card.
