Boneless, skinless chicken breasts can be alarmingly dry....like newspaper and sawdust mixed. Overcooking them is tres easy, and they absolutely do not benefit from low and slow cooking. If you're dead set on crockpot chicken, at least use something on the bone with a little fat. Like bone-in thighs with the skin removed...

I prefer thighs as well, but the breast meat wont be dry when combined with the salsa. And cooked on high for 4 hours won't make it mushy - it will taste just like shredded chicken.
I agree, chicken in the skillet tastes way better - but that wasn't what the OP asked for, now was it?
