Birthday Dinner for my gf, surf and turf, crab legs and filet mignon

I need help with Ceasar dressing.
Are homemade croutons worth the effort?
I'm gonna steam the crab legs, never done it before.
I'm good on the filet.
I need a side idea/recipe.
And I have a great recipe for the cake.
Any tips would be appreciated.
Her birthday isn't until September 9th, inb4 pics or gtfo. IRL 8.7, OT 7.6

Get those little snow crab clusters out of here. The man said King Crabs!
Just steam them for 4-5 minutes to heat. They are already cooked. I've heard some say they cut away one side of the shell and quickly grill them. That sounds great but I've never tried it.

Start with less Anchovy and add more to suit your taste. Making homemade croutons are worth the effort. Best part about the caesar is that everything can be made in advance and assembled the day of.
For another side, I would do asparagus, some sort of green bean or corn salad or artichokes. You want the side to offset the richness of the crab.

Fried green tomatoes for a starter
I do mine like this:
slice tomato
salt + pepper tomato
cover in flower (a dab of red pepper mixed in with the flower)
dip in egg/milk
cover in seasoned panko
Most time I eat them without a dipping sauce, but I use Brianne's Honey Mustard from time to time

Whenever I make homemade ceasar dressing I go with this recipe.
Ingredients
2 ounces cubed Parmesan
2 cloves garlic
2 tablespoons Dijon mustard
11/2 teaspoons white wine vinegar
11/2 teaspoon Worcestershire sauce
Pinch kosher salt
Pinch freshly ground black pepper
1 cup silken soft tofu
2 tablespoons extra-virgin olive oil
Directions
Starting on the lowest speed, chop the cheese cubes in the blender jar until it settles into the bottom of the jar, gradually increasing the speed. Add the garlic down the chute and chop until minced.
Next, add the mustard, white wine vinegar, Worcestershire sauce, salt and pepper, and tofu to the blender and blend until smooth. While the blender is running, drizzle olive oil down the middle of the vortex that has formed. Add more or less of the olive oil and blend until it reaches salad dressing consistency.
It only takes ten minutes and should look like this when done.

I had king crab legs for dinner Sat night. I can't eat both the legs and a filet. It's too much. The legs are filling. Your gf might be able to eat both, but I'd rather just the legs if I have to pick.

There's nothing to it. Put a steamer basket in the pot, fill it with water up to the bottom of the basket. Turn on the heat and simmer for a few minutes until the legs are heated throughout. They're already cooked and please don't boil in seasoned water. The legs are plenty salty and the meat is nice and sweet. Crab boil would be too over the top in my opinion unless, of course, the gf likes them that way. They need nothing but drawn butter and fresh lemon and keep that butter warm while you're eating. The legs cool quickly. I have those little warmer things with the candles underneath and the butter in the dish above the flame. They're cheap to buy. I have a dozen or so of them.
And, have the proper ustensils to crack the claws and cut the shell etc... They're cheap also.

Steamed or roasted aspargus is always a good choice with the legs, though not unique. Roasted potatoes would do well, also. I wouldn't go too heavy on the sides.

Those would do fine. Pick a simple seasoning for them to go with the crabs.
