new to salmon

so ive just started ordering salmon at restaurants and the range of goodness varies drastically. i know there are several different species, is there something i could ask the server that would indicate the goodness of salmon served. what should i be looking for. let me add, that i'm referring to good restaurants w/ servers that know what theyre doing. i would not ask a server at the chimes what type of salmon they're serving.

ETA: Oh...a joke????

I prefer Pacific Northwest Salmon over Atlantic salmon. The flavor of PNW salmon is stronger and mo better IMO.

Ask them for smoked canned filets packed in oil. That ensures premium quality.

But seriously, salmon from the northease coast taste differently than salmon from the Pacific NW.
