I guess go down to the coast and strike up a conversation with a shrimper you see on a boat that is docked, or go down to one of the many docks and get info from there.
After the oil spill I doubt you will be able to run an under the table shrimp brokering business, of course if you do it legit that brings its own set of challenges.
