Got 2 of my kegs cut up, wasn't nearly as bad as I thought. Took about 15-20 minutes total, including changing out the cut off wheel 3 times.
I made this jig to try and keep a nice circle and it worked great.
The hole:
Fits a lid I had for my 30 quart pot, now I need to find another lid for the other one:
