Brewing an American pale ale. Second all grain attempt. Just don't know what kind of hops I wanna use. Thinking of using 2 that I've never used before...any suggestions?

I've used and like (American hops):
Mosaic
Citra
Cascade
Centennial
Chinook
Simcoe
Warrior
Amarillo

Haven't used, but plan to soon:
Galaxy
Motueka
Nelsin Sauvin
Sorachi Ace
Pacifica
Delta (for multiple reasons)
