Egg wash and dry mix 50/50 of Zats(prefer seasoned with lemon, add Tonys are what ever is in the cupboard) and AP flour. Dip twice in each then into fryer.

I fired a batch last night.
Keep fish ice cold, wash in hot sauce, mix in fish fry, fry at 350 for 3 to 4 minutes.

I use thin strips instead of big whole fillets. I use big whole fillets for baked/ blackened dishes.

Exactly how I do it. No milk. No eggs.

I do whole fillets though and in a pan with hot shallow grease.

Search, it's posted about every Thursday or Friday during the summer. Just curious though do you really need a recipe for fried fish? It's not that difficult.
