Crock pots aren't good for all cooking, but for things that should simmer a good while, they work well. You can leave the house and let it go, especially with gas. I hate leaving gas on all night or when I have to leave the house during the day. That's one reason, I make large stocks in the big roaster, overnight. It's done by morning and I can strain and then reduce or whatever else I need to do.

For some folks with small kitchens, ovens and cooking something for a long time on the stove makes the kitchen hot. It's nice to be able to do that overnight or during the day when they're away. Crockpots also don't make the kitchens quite as warm.

And, finally, you can hold your favorite rotel dip in a crock pot forever during football season.

Mmm, Rotel & Velveeta!

A few years ago I bought a mini crock pot specifically for dips. Very handy to take along to potlucks and office parties and such.
