Looking or something to do with 2lbs of chicken breasts, any suggestions?

Possibly chicken parm? This is really to just prepare, as I will be cooking them tomorrow.

well, if i was looking for quick and easy, i'd butterfly em, rub em down with dry rub, grill, and baste with BBQ before pulling. quick easy and good

Pound thin. Salt liberally. Coat in flour seasoned with lots of fresh pepper. Dip into egg wash. Coat in bread crumbs mixed with salt and fresh herbs (your choice. I like rosemary or thyme) and some kind of cheese. I like pecorino romano from CostCo.
Pan fry in olive oil.
Eat with field pea salad -
2 cans field peas (crowder or black eye work), drained
1/2 cup green onions, sliced thin
1 red bell pepper, diced
3 small zucchini, diced
1 yellow squash, diced
2 ears corn
Dressing:
1/4 cup mayo
1/2 cup sour cream
1/4 cup tarragon vinegar
Fresh tarragon, chopped
Parsley, chopped
Salt
Pepper
Mix veggies with dressing. Salt to taste.
