at what point do they lose freshness?
They can get skinier the longer the sit in tanks. Lobsters aren't getting fed in tanks so I guess they are living off of their own meat.
Freshness of a lobster also depends on the quality of the lobster. Hard shells are going to have more meat then new shells (or soft shells). Hard shells also last much longer and are less prone to croaking compared to new shells.
