Go to your local meat market and ask if they'll order you some green bacon sides. Cooking them is kinda like browning a roux. You've got to stir, stir, stir to keep them from burning.

Asians markets must keep that in stock because the one near me always has it.

I hope you have some strong shoulders if you plan on making your own. Aso the humidity has to be low.
