has anyone tried this steak recipe besides me... i thought they were

excellent! I am not lying.... I had about 3 in filets and followed the steps. I was very skeptical especially towards the end of salting. I washed them off and pat them dry. I cooked them to medium.
THey were freaking excellent. Very juicy and I did not taste hardly any salt. I had a buddy try it with some 1 in target steaks and he said it was
salting steaks

im always banging the drum for salt only for a bit, dry it off, add pepper at the end and cook. i dont think i salt as heavy as they do, or as long, but essentially the same.
as explained the salt breaks it all down
getting the moisture off means you are searing instead of steaming
the pepper gives you some flavor/crust

I would try that except Meridian said that putting salt on steaks before cooking them makes them dry and I don't want to eat a dry steak.

I've done some modifying of cheaper cuts with salt\spice dry rubs and a few days in the back of the fridge, not sure it really made a difference but it was not a total waste of time either.

i once upon a time had a friend that was "seeing" tory mcphail and this technique was one of the only tidbits that i got from it. if i remember correctly he talks about the process in the wild side cookbook too but i havent cracked that open in awhile.
its easy as can be, and comes out great so its my "go-to" on steaks.

I added a nice salt/pepper coat to my mammoth steak the other night. I let it sit for about 30-40mins prior, while the sweet taters cooked. The steaks turned out amazing.
