squeeze lemon juice on them AFTER they are fried and then dip in tartar sauce.

well it usually depends on where I'm eating them and what is available. my preferred way is:

squeeze of lemon on each shrimp as I'm about to eat it. squeezing lemon all over the entire platter at the beginning is a rookie mistake.

then dip in remoulade.

Fried shrimp is just another excuse for me to eat even more tarter sauce. Yum.

I usually use a homeade remoulade.
(For NELA folks) But I lurve some Mohawk Tartar Sauce!
