How in Gods name has it taken two pages worth of receipes to get to a Pea Salad???

blanch the peas, drain and put into bowl.
boil 3-4 eggs, peel, dice, and add to the peas.
dice half of a purple onion
shred a handful romaine lettuce
salt, pepper, and a pinch of cayenne
add a large spoon of mayo.
mix well and refigerate. Enjoy

It is a great summer salad

I've had green pea and cheddar salad... wasn't too bad, but only because the cheddar taste compensated for the peas.

At any rate... I'm going to try the green pea and mint idea. Sounds somewhat Indian.

I don't use lettuce in mine, but I include grated cheddar and go heavy on the bacon bits. I was addicted to this salad a few years back. Also, heavy on the diced red onion.

Shameful secret food love:
Ramen noodles (Sapporo Ichiban), frozen peas*, three frozen chicken tenders sliced, sriracha. Yum. The peas and the chicken cook in the boiling liquid. Haven't had it in a couple of years.

*If out of frozen peas, handful of frozen spinach.
